Cheddar Dunkers

Makes 4 servings

Ingredients

  • 2/3 cup 1% lowfat milk
  • 1 tablespoon cornstarch
  • 2 garlic cloves, crushed and peeled
  • 1 dried bay leaf
  • 1/4 teaspoon Dijon mustard
  • 1 pinch nutmeg
  • 1/2 cup Cabot 50% Light Cheddar Cheese, grated
  • 2 cups raw broccoli florets
  • 1 cup baby carrots
  • 1/2 pint cherry tomatoes

Directions

In medium saucepan, whisk together milk and cornstarch until cornstarch is completely dissolved. Add garlic, bay leaf, mustard and nutmeg.

Place pan over medium-low heat. Whisking constantly, bring to a simmer; continue to whisk for 1 minute. Slowly add cheese and whisk until melted and smooth. Remove from heat, discard bay leaf and place on warming tray. Serve with vegetables for dunking.
