Deconstructed Lamb Gyro

Ingredients

  • 6 slices lamb tenderloin
  • 6 slices cucumber, 1/4 inch thick
  • 8 mint leaves, sliced into ribbons
  • 3 Roma tomatoes, diced
  • 3/4 C (6 oz) Plain 0% Chobani Greek Yogurt
  • 1 Pita round, cut into 6 triangles
  • salt and pepper to taste

Directions

Grill the pita bread and set aside. Season the lamb with salt and pepper and sear to the desired doneness. Combine Chobani Greek Yogurt, mint and salt and pepper and set aside to chill. Place the cucumber rounds on the pita triangles, and top each with a slice of the lamb. Dollop the Chobani Greek Yogurt mix on top of the lamb and garnish with tomatoes.
